Instructions
- Toast the vermicelli: Start by melting 1 tablespoon of butter in a pan. Once melted, add 100g of vermicelli (or kataifi pastry) and toast until golden brown and crispy. Set aside to cool.
- Make the pistachio filling: In a bowl, mix the cooled toasted vermicelli with ½ cup of pistachio butter and 50ml of tahini. Stir until the mixture is smooth, creamy, and full of texture. This will be your filling.
- Melt the white chocolate: Melt 25g of white chocolate in a microwave-safe bowl. Add a few drops of green food coloring to create a pistachio-inspired hue. Pour the melted chocolate into molds, place in the freezer for 5 minutes to set.
- Temper the chocolate: Now, let’s prepare the tempered chocolate. Melt 125g of milk chocolate and 25g of dark chocolate together using the bain-marie method. Stir until smooth, and then allow it to cool slightly.

- Unmold and enjoy: After the chocolate bars are fully set, carefully remove them from the molds. Let them sit for a few minutes for a softer texture or enjoy them cold for a firmer bite.
